- rubber stopper size - New Distillers
Hola Alex, First, most modern day clear plastic (polypropylene) containers can withstand up to a 12% - 16% ABV fermentation for clearing up to a few months, without leaching. However your correct, Glass is the best way to go for long secondary fermentation periods (stainless steel is good but theres a cost factor involved). Oak is used for aging the final distillation. Anything higher in ABV, you will need PET (Polyethylene terephthalate) containers, but they have to be specially made for 40% ABV or higher, and alot of commercial distillers do use them now for bottling now instead of glass: "PET can be semi-rigid to rigid, depending on its thickness, and is very lightweight. It makes a good gas and fair moisture barrier, as well as a good barrier to alcohol (requires additional "Barrier" treatment) and solvents. It is strong and impact-resistant. It is naturally colorless with high transparency. When produced as a thin film (often known by the tradename Mylar), PET is often coated with aluminium to reduce its permeability, and to make it reflective and opaque. PET bottles are excellent barrier materials and are widely used for soft drinks, (see carbonation). PET or Dacron is also used as a thermal insulation layer on the outside of the International Space Station as seen in an episode of Modern Marvels "Sub Zero". For certain specialty bottles, PET sandwiches an additional polyvinyl alcohol to further reduce its oxygen permeability." http://en.wikipedia.org/wiki/Polyethylene_terephthalate Now regarding your questions: 1. Cork, if made from real cork (from Cork Oak - Quercus suber), then it will breath a bit but not enough to effect aging. If its made from sythetic cork (plastic) it wont breath at all. 2. A primary fermenter is usually a large bucket (or round oaken or stainless steel vessel) used for the initial aerobic / anaerobic fermentation whis is very violent. After, the fermentation is racked off the lees / trub into a secondary fermenter (glass or stainless steel) which is sealed from air by an air lock. This is mostly done in the beer / wine industry. 3. Only EXPERIENCE AND TASTE will tell you that mon ami, only experience and taste......... Otherwise, we would all be in competition with Captain Morgan :):):). Vino es Veritas, Jim. --- In new_distillers, "castillo.alex" wrote: Hola a todos! (Hi everyone!) For Allen: I use the buckets Brewhaus sells. If you can afford them they´re a good choice; they allow about 30 liters, have an airlock and are plastic safe. If looking for plastic somewhere else check that the number 5 is printed at the center of a recycle triangle and next to it the letters PP (they stand for polypropylene I think) I wouldn´t use any other plastic because of the leaching issue. Of course nothing can beat either glass, oak or stainless steel. For Jim (or the rest of you experienced people): 1. I just changed today my aging jug´s plastic caps for cork ones, as I read this let the hooch "breathes" somehow resembling the real oak casks. My question is: Do I still have to turn up and down the bottle to make my oak sawdust/chips to move around and keep on opening the bottle for extra "breathe". In this new cork scenario will it be ok. just to soak it, cork tap it and forget it? 2. What are primary and secondary fermentations? I just ferment once and after that transfer to the rig. Is it something used in wine making? 3. I´m after the perfect spiced rum. I know what spices to use, namely macerations of cinnamon, raisins, cloves, nutmeg, coriander, pepper, lemongrass, vanilla and allspice (did I forget any?). What I don´t know is about the quantities (mls of macerations) of each. I will hate to ruin some of my booze for overspicing it. Thanks, Alex
