Storing candy melts (before you use them)
When you buy your candy melts its best to store them in their original packaging. This goes for any other candy melts substitutes that are chocolate based. On top of that I usually store them in a plastic air tight container to really seal in the freshness.
Un-opened candy melts have usually a good shelflife (3-6 months or more) but you need to make sure that you store them in a cool and dry area of your house or flat, where the temperature doesnt change that much. Ideally, this should be somewhere around 18 C or 65 F. If the temperature is slightly higher, its fine too, but if goes up and down constantly, that could be a real problem.
Good place to store your candy melts is a corner kitchen unit (the bottom one) away from a direct sun light, heat from stove, oven, cooker or fridge/freezer or a microwave.
Storing leftover candy melts
If youve melted too much candy melts and you end up with some leftovers, you can easily leave them to cool down and set in a room temperature (no need to cool down in the fridge or freezer). Once completely set, pop them out of the bowl and store them back in their original packaging or use a sturdy plastic bag.
Next time, when you want to use them, you might need to add a little bit of shortening, cocoa butter or oil so that the candy melts are smooth and runny next time you need to use them.
If you see that there are any bits of cake pops, nuts or any other inclusions you have been using, pour the candy melts through a fine sieve to get rid off any impurities before your candy melts set.
Storing finished candy melts sweet (no soft filling, such as chocolate bars, solid shapes, decorations)
Once your candy melts have set and hardened leave them in the room temperature around 18C or 65 F so that any humidity that might have been on the surface would have evaporated.

Wrap each finished candy in an individual cellophane bag and tie with a ribbon or string. Place in an air tight container in between layers of bubble wrap or at least greaseproof paper and keep in an ambient temperature of 18C 65 F approx.
If you dont want to wrap everything individually, you should at least layer each sweet in layers of greaseproof paper in an airtight container ( I use a large plastic box).
Firm candy melts with no additional inclusions of nuts, dried fruit or seeds, should last a minimum of 3-6 months or the same time as the use by date on the packet of your candy melts bag.
If you have nuts, dried fruit or seeds in your bars, this reduces the shelf life to about 3 months, but its only because the oil from the nuts or water from the dried fruit might eventually leak into the candy melts and start spoiling the way they look. They will still taste absolutely fine and you can still eat them even if they dont look their best.
Storing finished candy melts sweets (with fillings, such as chocolate truffles, cake pops)
Once your candy melts sweets are properly set (this might take a bit longer if youve used oil to thin your candy melts), wrap them individually in cellophane bags and store them in a layers of bubble wrap or paper inside a large plastic box with a lid.
There is normally no need to store your filled candy melts in the fridge or freezer (unless you live in a very hot country) and the usual 18C or 65F is perfectly fine environment to store them in.
The shelf life of each candy melts sweets will depend on what type of filling youve chosen. You can see that if you add alcohol or use water based filling for your candy melts truffles, you can extend their shelf life by few weeks.

How Long Do Candy Melt Decorations Keep?
If you are just melting and molding the candy melts, they should last as long as the candy melts themselves would last. Just be careful of heat sources and be sure they are wrapped so they don't absorb odors.
My dad has a candy melt plaque I made for him 24 years ago. I'm always surprised when I run across it in his freezer! They've been through 3 refrigerators since then, yet the plaque remains!
